Baking on the AIP diet can be a stretch sometimes, am I right? Without eggs, nut flours, and even baking powder, it can present a challenge. But where there’s a will (or a craving), there’s definitely a way!

I’m sharing six of my favorite AIP Paleo desserts and snacks that are all super delicious! And, when in doubt, seasonal fruit with a little coconut cream and cinnamon never fails. Plus, I’ve got my jam and toasted coconut butter recipes below so you can use that on the English muffin, waffle, ice cream or good old-fashioned fruit/coconut yogurt. Easy as can be!
The Autoimmune Protocol (AIP) can be a greatly beneficial healing diet for those with Autoimmune Disease or even severe digestive problems. I myself was on AIP for a few months and found great success with it in helping my Hashimoto’s symptoms.

While following this eating regimen, my antibodies reduced greatly, my energy returned, and much of my inflammation was reduced. It’s imperative that you do re-introduce foods gradually, and there are some studies suggesting this should be done sooner rather than later. You don’t want to reduce your gut microbiota diversity by relying on too many of the same foods over and over again. Some can find that they’ll get sensitive to what they lean on too much.
So, what is AIP (in a nutshell)? Basically the Paleo diet with further restrictions. There is a removal and re-introduction period of at least 30-days of common allergens: eggs, nightshades, nuts, seeds, chocolate, caffeine, alcohol, legumes, and certain spices.
I happen to believe life without dessert is no life for me! When on a healing protocol like AIP, moderation and quality are especially important. So yes, desserts with compliant ingredients and sweeteners are okay on AIP in balance. And, I happen to think having go-to desserts or snacks will make you even more successful because your happiness is important to your healing. I hope these recipes leave a smile on your face 🙂
In moderation, natural sweeteners are allowed on AIP. As always, you should listen to your body and see how you feel! I tend to bake with fruit (like bananas that are so naturally sweet on their own), maple syrup, raw honey, dates, and coconut sugar, but any from this list are compliant for AIP desserts:
Cooking with any of these sweeteners or fruit is what makes baking on AIP not only possible but fun!
