Salmon is one of my favorite foods, and having it conveniently in a salad prepped for my lunch is an ideal way to enjoy it. A great way to do this, is to use canned wild salmon because it’s so versatile and convenient.That’s why I use Safe Catch who tests every single fish for mercury and guarantees the lowest mercury of any brand, you can read more about that here. With all the excess toxins our bodies have to endure, I’m going to lean on brands that are trying to take the guesswork and stress out of trying to reduce the toxins. Today, I’ve whipped up delicious Salmon Salad Tartines which are great for a packed lunch on toast with a side salad or SO fancy for an appetizer on little potato rounds or try it on top of some fresh and crunchy slices of cucumber for an even quicker option! The possibilities are endless and the ingredients are simple. File this under: 30-minute meals and then some.

Mayo is great and all, but after finding out I had a sensitivity to eggs, I try to keep it to a minimum. Avocado is a great alternative because it’s fatty, creamy, and mild in flavor. Adding capers, chives and lemon juice was a no-brainer because that always works so well with any fish or seafood! Spice it up with any additional flavors you love and really make it your own.

Salmon Salad Tartines

(Mayo-free, AIP-friendly, Paleo, Whole30-friendly) These tartines make a perfect lunch or appetizer, it takes just minutes to make and is packed with omega-3's and flavor.
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Yield: 2

Ingredients

  • 1 can salmon
  • 1/2 small ripe avocado
  • 3 tsp brown mustard
  • 1/2 lemon, juiced
  • 1 Tbsp chives, chopped
  • 1 Tbsp capers
  • pinch sea salt & pepper
  • gluten-free/paleo toast or sweet potato rounds

Optional toppings

  • sliced cucumber
  • sliced radish or watermelon radish
  • more chives
  • more avocado slices

Instructions:

  • Mix salmon, avocado, capers, mustard, chives, lemon juice, and seasonings together in a bowl, mashing with a fork until well combined.
  • Toast your bread or potato rounds, and add the salmon salad on top. Optionally garnish with listed ingredients and serve!

  1. I love salmon and capers. All of these delicious flavors coming together makes this the perfect snack. The watermelon relish is such a yummy addition, too!
