Salmon is one of my favorite foods, and having it conveniently in a salad prepped for my lunch is an ideal way to enjoy it. Mayo is great and all, but after finding out I had a sensitivity to eggs, I try to keep it to a minimum. Avocado is a great alternative because it’s fatty, creamy, and mild in flavor. Adding capers, chives and lemon juice was a no-brainer because that always works so well with any fish or seafood! Spice it up with any additional flavors you love and really make it your own.
