Top 15 Recipes of 2015

This year has flown by… and looking back at the good, the bad and the ugly – I’m super grateful, have learned a ton and am so stoked for what’s to come in 2016. One big highlight was Food by Mars turned 1 back in September (yes I do refer to it like a child or pet… because it basically is) and it’s pretty crazy. Crazy good that is. This blog is the reason for new friendships, connections, brands, my creative outlet, inspiration and a supportive hub for living and eating healthy… to think that even one person has read and made a recipe off of FBM fills me with so much joy!! I still blush when someone tells me they “loved that squash lasagna”… (hint: that was numero uno on this top 15 list). Thank you all from the bottom of my heart for reading along, for your support and inspiration as well as for trying new things with me. <3

Now that I’ve gotten all soft and sappy on you, you can tell I’ve been reflecting. And, in doing so, took a look at some hard numbers to see what my readers loved the most this year. Ranked 1-15 are the top visited pages this year and I gotta say… they’re some good ones.

#1 Butternut Squash Lasagna (V + GF) – This has been the most popular recipe since it was posted back in March. This vegan, grain-free, gluten-free lasagna takes the pasta out of the equation and subs in roasted pieces of squash. The cheese is made from cashews, the pesto from kale – a hearty, winter dish you can make in bulk and feel good about. This one is tried and true!!

#2 Vegan Lemon Banana Ricotta Pancakes (V + GF) – With all the pancakes allover the interwebs this year, I kept coming across Lemon Ricotta… and why should a dairy-free or lactose-intolerant person such as myself not revel in that scrumptiousness as well, I ask? Use the leftover cashew cheese from the lasagna, in these babies – moist, filling and a tasty way to start the day.

#3 Dijon Fingerling Potato Salad (V + GF) – This one definitely got a lot of attention after being posted on Buzz Feed. The carrots and dijon take the potato salad somewhere special… fancy and the fingerling potatoes are too cute not to honor like this. Very versatile, you can add eve more fresh veggies here and don’t forget to garnish with those carrot greens!

#4 Gemini Birthday Post (Lemon Lavender Yogurt Cake) (GF + V) – Either I have a ton of Gemini readers or you guys are obsessed with lemon, lavender and dairy-free yogurt mixed into a fluffy pound cake. I’m happy with either reason, they’re both good.

#5 Banana Nut Brownies (GF + V) – One of my first recipes using the coveted Otto’s Cassava Flour… bringing elasticity back into my baking life (#glutenfreeproblems). This recipe is definitely made a lot and is a great standby. Very easy to whip up and so decadent.

#6 Butternut Squash Lo Mein (GF + V) – I was really stoked with this one, my husband couldn’t stop eating it. Anytime I can turn squash into pasta… it’s gold. I mean, it makes sense… who doesn’t want to sit down to a heaping bowl or plate of ‘pasta’ without their pant buttons popping off? This chick right here for starters.

#7 Cornmeal Crusted Eggplant Fries (GF + V) – Easy, good-looking on a spread and paired with a delicious marinara sauce. And they’re fries… sorta.

#8 Baba Ganoush (V + GF) – Eggplant MANIA! I love eggplant so much and baba ganoush is such a great way to enjoy it. This dip recipe is pretty simple and perfect for a crudite platter.

#9 Mushroom Leek Flatbread Pizza (V + GF) – Oh man… this flatbread pizza recipe has made multiple appearances on the blog and likely will again. It’s my default, because it’s full-proof and reallyyyyy good. These toppings were for spring and tasted amazing together.

#10 Green Galaxy Smoothie (V + GF) – Drinking greens with maca and spinach gives you super natural powers and that’s the truth. That’s why I dubbed this the green galaxy smoothie, you’ll see stars 🙂

#11 Simple Rustic Pomodoro Sauce (V + GF) – I don’t care for clumpy, watery tomato sauce in a jar… never have. It’s fine in a pinch, but what’s better is a quickie recipe you can whip up on any weeknight and pour over your favorite pasta and you know what’s in it 😉

#12 No Bake Lemon Squares (V + GF) – No bake treats are so much fun and just make you feel smart. Pucker up for these heavenly squares.

#13 Winter Squash Wreaths (V + GF) – One of my favorites for sure, I only posted it this past month but it was very successful to say the least!! It made me so proud not to mention it’s absolutely dreamy… naturally sweet, healthy and easy on the eyes.

#14 Greek Elephant Beans (Gigantes) (V + GF) – This traditional Greek dish warms my heart and my belly. This is a recipe you’ll want to have on hand for Sundays cooking at home.

#15 Spring Pea Toasts with Radish & Lavender (V + GF) – This spring pea pesto with radish and lavenders was so colorful and perfect for any Spring table, I gush just thinking of it! The flavors are so fresh, it’s literally spring on a piece of toast. Keep this one in mind for the season.
