Roasted Ranch Sweet Potatoes

This easy Roasted Ranch Sweet Potatoes recipe is a super simple side dish fit for any occasion.

Ingredients POTATOES – 1 lb. sweet potatoes, any type (2-3 large) – 1 Tbsp extra-virgin olive oil

Ingredients RANCH SEASONINGS (OR USE A PACKAGED RANCH SPICE BLEND*) – 1/2 tsp onion powder – 1/2 tsp garlic powder – 1/2 tsp dried parsley – 1/2 tsp dried dill – 1/4 tsp sea salt

 Preheat the oven to 425f degrees and line a baking sheet with parchment paper.

Scrub and chop sweet potatoes into ½ inch cubes and toss with olive oil and seasonings on the lined baking sheet. Arrange the seasoned potatoes in a single layer and add to the oven on a middle rack for approx. 30 minutes, tossing half-way through.

Serve potatoes, sprinkling extra sea salt to taste and optionally serve with a ranch or different sauce.
