– 6 Medjool dates (pitted) – 1/3 cup hot (boiling) water – 2 tbsp olive oil – 1/2 tsp vanilla extract (alcohol-free or omit for AIP) – 1 1/2 cup tigernut flour, sifted

Ingredients

Ingredients – 1/2 tsp baking soda – 1/2 cup chocolate chips (or carob chips or raisins for AIP) – flakey sea salt (optional)

 Preheat your oven to 350 F degrees and line a baking sheet with parchment paper.

Make the date paste by soaking the Medjool pitted dates in hot water for 15 minutes and then pour it all into a food processor  add the vanilla, and olive oil as well to blend into a paste.

 To a large mixing bowl, add sifted flour. Add the baking soda and mix.
