Gooey Microwave Paleo Cinnamon Roll for 1 (with sweet potato!)
This Gooey Microwave Paleo Cinnamon Roll for 1 is the perfect single serve recipe! Satisfy your sweet tooth while using healthy ingredients like sweet potato. It's gluten-free, nut free, and AIP-friendly.
Add boiling water on top of chopped date and let sit for 10 mins. Blend the dates, water, oil and milk on high speed in a good processor or blender until smooth.
To make the Rolls
Mash cooked sweet potato in a bowl and add flour and baking soda, mix well until crumbles form. Then add milk (you want it soft enough to form into a ball and roll)
Sprinkle the surface with a little more flour and form the dough into a rectangle. Add ghee/oil on top and spread evenly, then add cinnamon evenly on top. Roll the dough and optionally leave it as one large cinnamon roll or cut it into 3 small ones to fill out the ramekin more.
Add to a greased ramekin, mug, or small bowl.
Microwave for 1:30 mins (1:15 for 3 small pieces), and then drizzle sauce or use Simple Mills frosting and serve.
