Ingredients

large eggs

tbsp
cooked, mashed sweet potatoes without skin
heaping tablespoons

tbsp
preferred flour
almond, cassava, and tigernut is what I’ve tested and what worked for me; heaping tablespoon
1
tbsp
avocado oil or ghee
desired toppings like more ghee and cinnamon
Instructions
Mix all ingredients in a blender until smooth and aerated.
Heat a little ghee or avocado oil on a skillet. Once hot and shimmering, drop 1 large tablespoon of the pancake batter on the skillet.
Flip pancakes when you see bubbles form (use two spatulas, if needed, to prevent the pancakes from falling apart). Serve as desired, and enjoy!
