Paleo Greek Ziti - Pastitsio (AIP, Whole30)
"PASTA" LAYER: Chop spaghetti squash into rings and discard seeds
Season with olive oil and sea salt, bake on parchment lined baking sheet
MEAT LAYER: Prep ground meat, chop onions, garlic, seasonings
Sauté in olive oil and set aside
“CHEESE” LAYER: Add the cauliflower “béchamel” ingredients to a blender
Blend until smooth, set aside
When squash is cooked and ready to handle, remove the strands
Assemble layers of ziti in a casserole dish
Top off with more “béchamel”, cinnamon, & nutritional yeast
Bake until bubbling brown and golden
