Well, my immune system has been quite challenged as of late with spring allergies about! I’ve literally been blowing my nose for two weeks strait… (did I share too much?) So needless to say, I’ve been making a lot of soup lately. It’s been helping for sure. And this one is pretty easy to throw together and FAST.
I was excited to get my hands on some lemongrass and thought it might do wonders in a pea soup… well, I was so right. The allergies did not take my imagination… though it did make me look like Rudolph for a good week. Anyhoo! This soup is thick, creamy with a little kick (or more if you like!). And that color is amazing! This is a simple standby recipe you can easily add into your spring menu.

Yum! I hope you kick the allergies soon! I just made a pea soup this weekend too – twins! This lemongrass coconut milk version sounds incredibly flavorful and perfect for spring!
Aw, too bad about the allergies. I’m allergic to birch and live in a forest — so I get you… ♥ The last few years I’ve been much better, but a few years back I was a complete train wreck with allergies. This may sound weird, but have you tried taking digestive enzymes? They really help me get out of allergy mode fast — I just take some every half hour until all the symptoms are gone — they help to break down all the mucus. It was a weird trick someone shared with me once and I found it to really help.
This soup is so beautiful though — very spring-like. I’d just want to look at that color all day 🙂
Thanks so much for the tip! I do take probiotics daily, but not as frequently as you suggested. I will definitely give that a try!!! It sounds like a very gut-oriented treatment so I like it 🙂 my nose is less red and chapped these days so I’m getting there! Xo
