{Spring Equinox} Aries Birthday Post & Recipe: Strawberry Jelly Donuts

Aries is the first sign in the zodiac and rightfully so as natural leaders and independent people, flying solo is their comfort zone in a lot of areas of their lives. Aries knows how to focus and take care of themselves, if you haven’t taken care of yourself first… how can you take the next step?! They’re often well-groomed, neat, and generally organized and optimistic. They also make wonderful friends and can be very generous and helpful, treat others as you’d treat yourself… it makes perfect sense to Aries. You’re in good company, their magnetic and energetic spirit is refreshing to be around and can bring out the best in everyone.

Good friends in return can help Aries stay on track, while their energy to lead is strong… it can fizzle out if they lose interest or get bored as a cardinal fire sign. Sometimes that can even stem from putting so much pressure on themselves to lead! Let them take a rest when they need to and remind them they don’t need to have all the answers. These go-getters are brave and can take their friends and loved ones far when you hop on for the ride with some definite laughs along the way.


Shopping for Aries? Spa day! Aries loves to take care of themselves and why shouldn’t they? An easy win is a gift card for a massage, mani/pedi, spa… you name it. Or try a shopping gift card if they love fashion, make them feel special and give them a break. The “head” represents Aries, so you can also consider hair accessories or tools, a hair stylist appointment, or a beautiful hat. Oh and if it comes in red… that just might be the one for them (whatever it may be!).


Happy Birthday, Aries! Time to shine. It’s Aries Season and the start of Spring! Celebrate Aries Birthdays, they’ll likely take the lead on how they want to party, so do them a solid and go with it. Show up, show them support, and have an awesome time. I wanted to make something RED for Aries… that is their color and the color of Mars, their ruling planet. Enter: Strawberry Jelly Donuts. With an independent sign, I couldn’t see cutting a cake for Aries. Go getters need their special sweet on-the-go! But it’s not all business, there’s definitely a gooey center in there. They’re more than happy to share with their friends, but need to be able to have their own 😉 And those curly ram horns?? Donuts all the way!! These beauties are made with coconut and oat flour and no refined sugar… Instead of topping them with sugar, I was in search for a better option. I got the idea to use freeze dried strawberries from the amazing Against All Grain blog.

With spring here and new beginnings all around, how will Aries Season inspire you? Take the lead more, don’t be shy, go for it! Don’t forget to put yourself first a little more, take care of yourself because if you don’t… who will!?! Make the time and dedicate it to the things you neglect or don’t get a chance to do for Y.O.U. Get some lovely flowers while you’re at it… these sunny narcissus flowers will brighten any mood and are the flower of March.



Ingredients

gluten-free // makes 6 regular donuts using donut pan // adapted from Against All Grain

Donuts:

  • 4 large eggs, room temp
  • 3 tbsp coconut oil
  • 1/2 cup non-dairy milk, room temp (I used light coconut milk)
  • 2-3 tbsp maple syrup or honey
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1/4 cup oat flour (grind those gluten-free oats!)
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 4-5 tbsp+ strawberry jelly/jam

Topping:

directions

  1. Preheat the oven to 350f degrees and lightly grease a donut pan (or you can use a muffin pan instead!) with coconut oil.
  2. Whisk eggs until slightly frothy, add in the oil, keep whisking.
  3. Add in the milk, honey, vinegar and vanilla and keep whisking
  4. In a separate bowl, mix all dry ingredients and don’t leave any chunks behind.
  5. Slow pour the dry ingredients into the wet while whisking until well blended and the batter has formed.
  6. The batter should be creamy but almost puffy.
  7. Using a pastry bag with a large round tip or a plastic bag with a cut, ladle in the batter into the bag.
  8. Pipe half of the batter into each donut ring, filling only half of the cavities (since you’ll need to add in the jelly!)
  9. Lightly tap the batter with your fingers so the batter can spread out and fill in any gaps.
  10. Next, using another piping bag or plastic bag, spoon in approx. 4 tbsp. or more strawberry jam/jelly and using a small tip or making a much smaller cut than you made for the batter.
  11. Lightly pipe the jelly only in the center along the donut rings as shown in the photo. I went around the ring twice using the smallest round tip I had to be cautious.
  12. Once you’re done there, pick up your piping bag with the batter and concentrate over the jelly so you cover that on each donut ring, with the remaining batter, go over the edges/middles, using your finger tapping trick again to fill in any gaps. Make sure jelly is covered.
  13. Bake for approx. 18 minutes and let donuts cool on a drying rack, to speed up the cooling process, pop them in the fridge for 10-15 mins or so.
  14. While they cool, throw the freeze-dried strawberries into a food processor and grind until they’ve turned into a powder. Set aside.
  15. Once donuts are completely cooled, add 3 tbsp honey or maple syrup to a bowl and using your pointer finger, dip into the honey and then go around each donut ring with your finger until you have a nice coating.
  16. Next using a sifter, add the strawberry powder you just made and sprinkle over the top of donuts so it sticks to the honey/syrup!

    • Yay! Happy (belated) bday 😉 – I haven’t tried it with an egg replacer, but I’ve used flax eggs in general for coconut flour and it usually works out well. Hope it helps! If you try it, let me know!
