Raw Curry Broccoli Salad (V + GF)

Big heads of summer broccoli are everywhere and I am pretty excited about it. This in season A LOT throughout the year here, so I find myself eating it in new ways all the time to keep it fresh and exciting. Like an old marriage or something— keep that fresh!!

I roast broccoli like it’s my job- that’s been done to death. But dear goodness is it GOOD. Sautéed I like too… But let’s be honest, there are summer days where turning on your oven and stove top are not only not tolerable but quite possibly a fire hazard. So…raw it is! Not to mention raw greens are never a bad idea, in fact they’re what you should always find ways of incorporating into your daily meals.

This raw curried broccoli salad with sweet grapes and crunchy walnuts is my easy answer to all of the above and it’s also a crowd pleaser for picnics and BBQs. No mayo, no bacon, no dairy- it’s squeaky clean and easy to make. I so hope you enjoy it!!

Ingredients

  • 1 head broccoli
  • 5 tbsp water
  • 1/2 tsp yellow curry powder
  • 2 tbsp tahini
  • 1/4 cup grapes, halved
  • 1/4 cup walnuts, chopped
  • dash salt, pepper

Directions

  1. Cut broccoli head into florets that are easy-to-chew size. Toss in a bowl with grapes and walnuts.
  2. In a blender, add: water, curry powder, tahini and mix until a dressing forms.
  3. Pour dressing over broccoli, grapes and walnuts and mix. Top with salt and pepper and serve.

  1. Wow, this sounds good! I though they were olives {which I love}, but grapes sound awesome too. I’ll definitely have to try this soon {most especially because #tahini! ♥}.
