It’s my birthday, and I’ll parfait if I want to! Seriously though, banana cream pie is one of my all-time favorite desserts, EVER. I remember having it at a restaurant many moons ago and thought they just nailed it! This pie became my favorite from then on. I’ve had it anywhere again that could top that original one, until of course, I decided it was time to make my own dairy-free banana pudding and parfait the heck out of it.

3 Steps to the Best Banana Cream Pie Parfaits

The only thing standing between you and these delicious Paleo banana cream pie parfaits is a little time, some assembly, and a bit of patience. Check out these three steps to get a taste of what’s required:

  • First, the dairy-free banana pudding requires no heating. Just mix, cool, and set in the fridge.
  • Next up — the crunchy layer of cookies. This crumble layer takes just a few minutes to pulse in the food processor and bake. I had extra leftover that I stored in the fridge and use on top of coconut yogurt with fruit because … why not?
  • Lastly, speaking of coconut yogurt, I topped mine with a bit (or you can do more coconut cream if you’d like), more crumbles, and some cute banana slices. A sprinkle of cinnamon never hurt anyone, either, and if you’re not AIP, some chocolate would be great here too!

Paleo Banana Cream Pie Parfaits

These dairy-free banana cream pie parfaits are easy and allergen-friendly! Naturally sweetened with ripe bananas and raw honey, it makes a perfect healthy treat you’ll love.
(PALEO, AIP, DAIRY-FREE, EGG-FREE)
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Yield: 3

Ingredients

Pudding:

  • 1 13.5 oz full-fat coconut milk
  • 1 Tbsp gelatin powder unflavored
  • 3 ripe bananas divided
  • 1/2 tsp vanilla extract or vanilla powder for AIP or omit
  • 1 tsp raw honey optional
  • Dash of turmeric for color to your liking
  • Dash of sea salt

Cookie crumble:

  • 1/2 cup coconut flour
  • 1/4 cup shredded coconut unsweetened
  • 4 Tbsp coconut oil
  • 1/4 tsp vanilla extract omit for AIP or sub vanilla powder
  • 1 Tbsp raw honey or maple syrup
  • sprinkle of cinnamon
  • pinch of salt

Instructions:

  • Add gelatin to coconut milk in a medium mixing bowl, and whisk until well-combined. Let sit or “bloom” for 15 minutes.
  • Mash 2 bananas with a fork (should give you approx. 1 cup of mashed bananas) and add to a high-speed blender. Add in coconut milk plus the gelatin mixture, turmeric, vanilla, and sea salt. Blend for 20 seconds or so until well-combined.
  • Pour pudding mixture into a bowl and cover well. Leave in refrigerator for at least 1 hour to set.
  • In the meantime, make crumb mixture by adding crumb ingredients to food processor and spread out on a baking sheet, bake on 350f degrees for 10-15 minutes until golden brown. Let sit and come to room temperature.
  • Slice remaining banana into thin slices.
  • Layer the parfaits by grabbing your serving cups and adding a layer of the crumbs first, followed by some sliced bananas, a layer of pudding and repeat! Finish with whatever toppings you’d like (see above for more ideas). *I had leftover crumbles that I save in the fridge to top my coconut yogurt with!*

Notes:

Toppings: sliced bananas, cinnamon, more crumb, optional to add shaved chocolate (not AIP), coconut cream or coconut yogurt.

  1. Do you put the coconut milk in the fridge and just use the solids? Or do you not refrigerate and use the entire contents of the can?

  3. I love your recipes. Could you tell me the type and brand of gelatin you used? Is it Vital Proteins beef gelatin? What are the top two brands you suggest? I’ve never used gelatin like this and am interested in your recommendation. Thank you! 

    • Thanks so much, Veronica! My favorite is Vital Proteins, yes — I’ve used Great Lakes as well but sometimes find it has an off-putting taste that I don’t find as much with VP depending on how it’s used.

  4. There’s no way these ingredients will ever look like that picture. Mine finally set up to a very soft pudding consistency after leaving in the refrigerator overnight, definitely not “pie” consistency. I couldn’t handle the texture or flavor of these and ended up throwing them out. 

    • That’s too bad! But I will say, perhaps it was the ingredients or an issue with how it came together because I’ve been tagged on many photos and my membership clients have made this dessert a lot and love it. It also looks great and I even saw someone make it into a full pie – perhaps something like that would be better if you ever wanted to try again.

    • chopped nuts if you’re eating them, and if not and you need an AIP version, try chopped tigernuts perhaps!

  5. Mine stayed liquid, any suggestions as to what I did wrong?  I made sure it was full fat coconut milk….it made a good smoothie. Lol

    • So weird, perhaps the gelatin powder was no good or not enough? Mine is usually super thick haha!

      • Ok I wasn’t giving up, I attempted again and it worked!! I bought different gelatin.  Omg Alison this is my new favorite dish and so easy to make.  I have so many things I cannot have so this was a gawd-send.  Thank you for this amazing creation!!

        • OMG Yay! isn’t that so funny though, I always see that gelatin brands can differ SO MUCH. I’ve been sticking with Vital Proteins as I find the taste is the most mild. I’m so happy you loved the turnout – enjoy, Amie!

          • I am wondering if I did something wrong, as well!  I used vital proteins beef gelatin and it’s been in the fridge for almost 24 hours and still liquid.  Do you have any suggestions for how to thicken it?  Thanks!

          • That’s very strange, Lindsey! Usually, it gets very thick quickly – can you double-check measurements? or expiration dates on ingredients? was it full-fat coconut milk in a can or thin coconut milk from a carton?

  6. Hello, I’m new to AIP. When you say unflavored gelatin, what do you mean? I have Vital Peptides beef gelatin. Is that ok?

  7. I love your recipes and this one is no exception! FYI–GT’s Cocoyo Yogurt is a great raw coconut yogurt to buy if you don’t have time to make your own (#busy mom life). Also, if you are able to tolerate chocolate, Pascha Organic 100% Raw Cacao are very clean and make a great topping for this (I have been doing AIP for a year and in small doses I can do chocolate with no sugar or coconut sugar, but everyone is different). Thanks for another great recipe!
