Do you like fried sweet plantains? Well not only am I terrible at making them… (strong intro, I know), but I found a healthier way of making them that does not disappoint in the flavor and texture category!! Better? Meet my Oven Roasted Sweet Plantains (maduros) using nothing but coconut oil, sea salt, and your oven… you’ll have the perfectly caramelized exterior with the sweet gooey center! I love to serve these as a side or have them as a snack… it’s a childhood fave that brings me back to my Grandparent’s kitchen and the best memories! Hope you love these as much as I do.
Roasted Maduros (Sweet Plantains)
These sweet and salty roasted plantains will be your new favorite side dish!
- 2 Ripe plantains
- 1 Tbsp Coconut oil
- Sea salt to taste
Cut plantains in half lengthwise, remove skin and then cut into oblong chunks.
Lightly toss slices of very ripe plantain with coconut oil with a little sea salt and cover in a roasting pan with tin foil.
Cook low on 320f degrees for approx. 20 minutes.
Then, remove the cover (the plantains will be a little puffy and very soft), crank up the heat to 420f degrees for 15 minutes or so, watch them and they're done when you're happy with the color! I like mine dark!
