Geminis are thoughtful, curious and always eager to learn and try new things. They have great communication skills, which is a part of their intellectualism and they tend to be very intelligent. Because of these skills, they can sometimes be restless, always thinking or talking or absorbing new knowledge, it’s hard for them to find time to rest! This is also where the twins come in to play – Geminis can sway from different personalities from time to time, they can be splitting themselves in multiple directions just to quench their thirst for continuous movement. They are famous multi-taskers, and also love sharing what they know with others.
Ruled by Mercury, Geminis are very youthful – they say an active mind keeps you young and they are here to prove that. They’re bright and expressive, and if I haven’t said it enough… they love to talk. One thing you can always count on, Gemini will never bore you. They certainly don’t like to become predictable if they can help it, they’re just too busy for that! They’re also very flexible and adaptable, they don’t need a routine unless they’ve set one for a specific reason. They can think and act on their toes, have a charming and quick witted demeanor which makes them a fun friend to have around.
Shopping for Gemini? This one is easy. Geminis are super expressive, they’re not holding any secrets back, so if you’ve been paying attention – you should know exactly what they like! If you’re totally stumped, keep in mind that since they’re constantly collecting knowledge or something based on their hobbies and likes, anything to help organize that will be a great gift. A lovely book based on their affinity will work well, anything to do with communication… like a cell phone case, perhaps? Travel goodies would also be welcome! They’re adventurous after all, a nice leather passport book or other travel accessories would also be a great place to start.If all else fails, stalk their social media… their should be plenty of hints.
Happy Birthday, Gemini! Gemini season inspired me to create this super moist, tangy and floral “yogurt” cake. Yogurt is in quotes because I used coconut yogurt for a lactose-free option and the results are decadent! The zesty lemon paired with the soft lavender gives enough variety and tang for any Gemini to enjoy for their special time. Lavender is also their flower! How fitting to throw it in their dessert.
How can Gemini inspire you right now? What can you be more energized about? What have you been wanting to learn or where have you been wanting to travel? Go for it. Life is too short, and Gemini is all about making the most out of it.
Also, a quick note about the yogurt – you can use one 6oz. coconut yogurt cup for everything in this recipe (4 oz. in the cake and 2 oz. for the glaze)! And also, I used Otto’s Cassava Four in place of any gums which gave it the same elasticity I hoped for!
serves 8 // gluten-free, lactose-free, vegan optional
- 1 1/2 cups gluten-free flour mix (no gum)
- 1/2 tsp cassava flour or xantham gum
- 1 tsp baking powder
- 1/2 cup (4 oz) coconut greek yogurt
- 2 large eggs (or flax eggs)
- juice & zest of 1 lemon
- 1 tsp vanilla extract
- 1/2 cup butter, room temperature
- 1/3 cup maple syrup or honey
- 1 tbsp culinary lavender (plus more for garnish)
Lemon Yogurt Glaze
- 2 oz coconut greek yogurt
- 1 tbsp maple syrup
- juice of 1/2 lemon
- Pre-heat the oven to 350f degrees and line a loaf pan with parchment paper.
- Mix all dry ingredients together in a bowl (flour, baking powder) and set aside.
- In a stand or hand mixing bowl, add butter and syrup/honey and whip until fluffy. Scrape the sides down with a spatula and add the eggs while still mixing, one by one. Then add in the vanilla and mix everything until everything is well-combined.
- Slowly pour in half of the flour, alternate with half yogurt and then again in that order until everything is mixed. Then add the lemon juice and zest while still mixing.
- Finally once well combined, turn the mixer off, and with a spatula, fold in the lavender.
- Scoop the batter into the parchment lined loaf pan and bake for approx. 40 minutes until lightly golden brown on top and a fork comes out clean. Once finished, let cake cool on a drying rack for 10 minutes or so.
- Meanwhile, whip up the lemon yogurt glaze in a food processor until a glaze has formed.
- Once cake is cooled off to the touch, pour glaze over top and garnish with more lavender, serve!
