Blue Moon Smoothie (Blueberry + Lemon Thyme)

I had every intention of naming this post “Blueberry & Lemon Thyme smoothie” until I found out that tomorrow is a BLUE MOON and there won’t be another one until 2018. I will drink to that! FYI- A blue moon is when there are 2 full moons in one month, and the 2nd one is called a blue moon… it’s rare and only happens… ready? wait for it – ONCE IN A BLUE MOON. Ahhhh that feels better now that I got that out. I can get to the recipe now.

Lemon Thyme is a type of thyme with a distinct lemony scent and deliciously fresh taste! I love using it to sautée veggies with – but it’s really just wonderful in any recipe that calls for lemon. Blueberries and lemon are a great combo, and if you don’t have lemon thyme – just use thyme and a little lemon zest for the same effect. But if you can find lemon thyme, grab it! My bestie has some in her herb garden and brings me some once in a blue moon so.. I’m lucky (OK last pun for this post).

Also, I’m using Flax milk which I’ve been using up a storm recently. My issue with other milks lately are all the additives such as carrageenan that I can’t seem to get away from… it’s creeping its way into all of my milk. This one says it’s free of it and also its SUPER creamy and low in fat. It’s also so good for you, just doesn’t contain as much protein as others do so you’d have to get the protein elsewhere. I’d highly recommend this though, the taste is great, the creaminess is perfect for pretty much everything I’ve used it in and it’s so good in coffee or tea as well.


Ingredients

  • 1/2 cup fresh blueberries
  • 1/2 frozen banana
  • 2 tsp fresh lemon thyme (strip leaves off and discard stems)
  • 1 cup flax milk (or other non dairy milk)
  • 1 scoop vanilla protein powder (I love Aloha brand – use AlohaMars20 for a discount)

Directions

  1. Blend all ingredients in a blender until smooth and serve immediately.

  3. This is a smoothie that is right up my alley! This looks awesome. I am super intrigued to try flax milk too – I’m with you, I hate all the ‘extras’ that end up in a lot of the other non-dairy milks.
