After trial and error, I’ve done the research and testing and found an easy Paleo Flour Blend to use 1:1 in place of traditional/wheat flour in: cakes, cookies, and MUFFINS! I’ve also tried out a tree nut free option that works amazingly well too. These cookies are an update to my previous recipe for Pumpkin & Hemp Oatmeal Cookies! This time they’re totally grain-free and contain slightly less sweetener, perfect for breakfast or tea time. The pumpkin puree holds them together also adding to the sweetness but the taste is not very apparent. And if you love honey-sesame seed snacks, these cookies will be your new favorites!
